Dining With Dignity: Supporting Cognitive Health in Senior Dining Experiences

By Gila Singer, MS, RDN, CSG, CDN, FAND

As the “silver tsunami” continues to reshape demographics, prioritizing the cognitive well-being of older adults has become increasingly vital.1 Adults aged 65 years and older now represent more than 17% of Americans, and this group is projected to grow by nearly 30% over the next 25 years.2,3

With longevity on the rise, health care priorities are shifting from simply extending lifespan to enhancing quality of life, particularly by supporting cognitive health. Johns Hopkins Funds AI Research Across the Country to Support Aging Patients
Over the past four years, the Johns Hopkins Artificial Intelligence and Technology Collaboratory for Aging Research, or JH AITC, has funded research projects in 45 states; Washington, D.C.; Puerto Rico; and the US Virgin Islands. As of December 2025, these projects have collectively resulted in 42 published research papers and brought seven new products to market, receiving a collective 54 awards and $11.7 million in follow-on funding. The center currently funds research covering a wide range of topics, including cognitive decline, caregiver support, independent living, and end-of-life care. At Hopkins alone, one research team is developing a chatbot to serve as a digital care navigator, helping patients with dementia find and understand solutions to their problems. Another uses AI to build optimized models for neighborhood caregivers, enabling professionals to assist more at-home seniors at lower costs. A third is creating a prediction model to identify which Alzheimer’s patients are most in need of palliative care. All of this research is made possible by the AITC. Learn more »

AI-Powered Wearable Boosts Preventive Care for Older Adults
University of Arizona researchers in the Gutruf Lab have developed a comfortable, easy-to-use wearable device that incorporates AI to detect subtle warning signs of frailty, signifying a leap forward in elderly care. The sleeve simultaneously records and analyzes motion of the wearer and produces an AI analysis. With the device sending just the results, not the actual hundreds of hours of recorded data, transmission is reduced by 99% and the need for high-speed internet is eliminated. Results are transferred via Bluetooth to a smart device. Long-range wireless charging capabilities free the user from plugging in the device or swapping out a battery. Learn more »
